Something...Cart Related?

Today I got some pictures from Dad of the cart. You can see the tandoor encased in a steel drum. The box that the oven is built into will be covered with stainless steel sheet metal. The large square hole is where the two burner steam bed is located. The large white circle is our 55 Cup rice cooker. Chris still needs to install the steel canopy that will protect the cart from the weather.

When it's all finished we will be the only Indian food cart in Utah. In fact, we will be one of the only food carts with a tandoor oven in the country! We're banking on uniqueness. But I think we've made the right move. We could have opened with the cart the simple food cart it was when we got it. It was in great shape then, but adding a tandoor oven and commercial rice cooker will do a lot to extending the quality of the food we offer. We plan on doing something better than the taco and hot dog carts that Salt Lake City is used to. (not that those are bad, we love City Dog, on Third South, Third East, and all the many taco cart across the valley).
